Pedro Mathey was a Peruvian cyclist who was active in the late 1940s and early 1950s. In 1948 Mathey competed in the road race at the London Olympics but did not finish the course. Three years later he won bronze in the team road race at the 1951 Pan American Games in Buenos Aires with the non-Olympians Morejón Llerena, Óscar Rodríguez, and Sergio Mello.
