Jorge Cevallos was an Ecuadorian football linesman. In 1992 Cevallos officiated in four matches at the Barcelona Olympics, including the opening fixture of the tournament between Italy and the United States. The following year he officiated in matches at the 1993 Copa América tournament, which was held in his native Ecuador.
