Elizabeth Zaragoza ran the 5,000 metres for El Salvador at the 2004 Athina Olympics. Born in San Francisco, she had dual citizenship as her mother, Zoila, was born in El Salvador. Elizabeth Zaragoza ran in college for San Francisco State University. She competed for El Salvador at the 1997 Central American Games and at the 1998 Caribbean Games. She had qualified to compete in the US Olympic Trials in 1996 but due to an Achilles’ tendon had to withdraw. However, she worked for the Atlanta Olympic Committee as an interpreter where she met the El Salvadorean contingent.
Zaragoza married former Wake Forest distance runner Steve Guerrini. It was later revealed that she ran at the 2004 Olympics while she was pregnant. The couple later settled in California where Zaragoza-Guerrini worked as a professor in the humanities department at Santa Rosa Junior College.
