Born in Fond du Lac, Wisconsin, Edwin Hunter lived in Chicago at the time of the 1904 Olympics and was a member of the Midlothian Country Club. Hunter played both golf and tennis at the 1904 Olympics. He did not make match play in the golf tournament. Hunter played tennis doubles with Frank Wheaton and they went out in the quarter-finals.
Hunter was a physician who was from Wisconsin and attended Hahneman Medical College, also serving his internship there. He initially worked for the Kawneer Company, an aluminum supply company, as their office physician in Chicago. In 1923 he moved to southwest Michigan along with his sister, Jessie Hunter. Edwin Hunter practiced in Niles, Michigan until shortly before his death.
