Henrik Jørgensen ran the marathon at the 1984 and 1988 Olympic Games. He also competed at the 1983 and 1987 World Championships. Jørgensen’s greatest victory came in 1988 when he won the London Marathon. At London in 1986 he had set a Nordic marathon record of 2-09:43, his eventual personal best, and through 2018 that mark remains a Danish record. He was twice champion at the København Marathon, in 1982 and 1983, and in 1986 placed second at the Berlin Marathon. On the track Jørgensen was Danish Champion at 5,000 metres in 1985 and 1991 and 10,000 metres in 1980 and 1988, also winning the national cross-country title in 1988-90.
Jørgensen married Mette Holm, a top marathoner in her own right. Their daughter, Anne Holm Jørgensen Baumeister, carried on the family tradition and competed at the 2016 Olympics in the marathon.
