Axel Jöhncke was born in København (Copenhagen), where he also completed school. He then studied commerce in Germany, England and France. Jöhncke worked in Stockholm as a manager in a trading company and later for the engineering company Titan. After first acting as vice-consul, he was appointed consul general for Denmark in Stockholm in 1928, and was also a member of the Arbitration Committee of the International Chamber of Commerce and vice-chairman of the Consular Corps. For his merits, Jöhncke was awarded various distinctions, including Knight of the Order of the North Star, Commander of the Order of Dannebrog, Knight of the Legion of Honour, Knight of the Belgian Order of Leopold and of the Icelandic Order of the Falcon.
Axel Jöhncke was a member of the Association for the Promotion of Fencing (FFF) in Stockholm. At the 1912 Olympic Games, he advanced to round two in the individual foil competition, but with the Swedish sabre team, he placed last. Sabre fencing was not very popular in Sweden at the time, and the first national championships were not held before 1923. Jöhncke was married to Gerda Margareta (née Nielsen).
